Jollof Rice holds a special place in the hearts of Nigerians. It’s the star of celebrations, weddings, birthdays, and family gatherings—a dish that brings people together. More than just food, Jollof Rice is a cultural symbol, representing the bold flavours, warmth, and rich heritage of Nigeria.
Here’s a simple and authentic recipe to help you recreate that magic at home.
Ingredients
Serves 4–6 people

2 cups long-grain parboiled rice

1 onion, finely chopped

3 medium tomatoes, blended

1 red bell pepper, blended

1 green bell pepper, blended

2 tablespoons tomato paste

3 cloves garlic, minced

1 tablespoon grated ginger

1 teaspoon curry powder

1 teaspoon paprika

1 teaspoon dried thyme

2 cups chicken broth (or vegetable broth)

1 cup water

1 cup vegetable oil

Salt to taste

Instructions

Rinse the rice thoroughly under cold water until the water runs clear. Drain and set aside.

Heat the vegetable oil in a large pot or Dutch oven over medium heat. Add the chopped onions and sauté until translucent.

Stir in the garlic and ginger, cooking for about one minute until fragrant.

Add the blended tomatoes and peppers. Cook, stirring occasionally, until the sauce thickens and the oil begins to separate.
